"Tsurusho" is Yamaroku Soy Sauce's pride and joy, which pursues "deep richness and mellowness" to the utmost.
This soy sauce is made using the "second brewing method," in which the finished raw soy sauce is aged for about two years, but is not put into production and is returned to the barrel once more, where the ingredients (except salt) are added again and brewed for another two years.
This is a double brewing process, where twice the ingredients are added and the soy sauce is slowly aged by the power of nature. By using the salt from the mellow raw soy sauce instead of salt, we have been able to bring out a deep richness, aroma, and mellowness never before seen.
