This product has been certified as organic by the Japanese Agricultural Standards (JAS).
The cultivation, harvesting, and transportation of the ingredients are strictly controlled to prevent any non-organic ingredients from being mixed in, and this naturally fermented soy sauce is made in accordance with the strict organic standards of the Japanese Agricultural Standards.
It is produced using a method called "re-brewing," in which raw soy sauce that has been aged in koji is added instead of salt water, resulting in a soy sauce with enhanced flavor, a darker color, and a stronger flavor.
