A langue de chat is a French baked cookie
With a light texture that easily melts in your mouth.
The dough is made by mixing equal amounts of sugar and butter that has softened at room temperature, and adding flour, egg white and vanilla.
The dough is formed into long, thin bars and baked in the oven. And the crisp Shiroi Koibito is ready.

In making the cookies, we pay the utmost attention to each process, even the simplest ones. If the fresh cream is added to the dough even slightly too early or late, the cookies won’t have the same texture.
